time for another Random Thursday! I hope you are having a wonderful day and it does not rain as much where you live as it does in Ohio.
This is the topic.
1. Here is what I do when I have no idea what to cook.
I look into the fridge and see what vegetables I have. I choose 2 or 3 of them and roast them in a pan with lots of spices. Then I add some potatoes, rice or pasta and maybe some vegan Asian chili sauce. Done.
I usually add a salad, preferably spinach.
And this is how I make the dressing:
Mix horseradish mustard, soy sauce, oil, lots of spices and some water. Done.
Sounds pretty easy and tastes delicious.
2. Kohlrabi Schnitzel.
I tried this for the first time a while ago. You can find the recipe here.
Don't burn them as much as I did.
3. Potato-peanut butter-vegetable-curry.
I love curries. I really do. Especially when they include chick peas. One of my favorite vegetables. Well, I love all vegetables except of onions.

4. Red lentil soup with coconut milk and chili.
Here is my recipe. It is so easy to make and does not take very long so I always make a huge pot full of soup so that I can eat it for a couple of days. I tend to go crazy on spices but you don't have to if you don't like the soup to be too spicy.
5. Roasted asparagus.
I am German and I think all Germans love asparagus a lot. White or green, I love them all.
So what you have to do is to peel the asparagus and roast it in a pan for ca. 10 minutes together with some brown sugar, chili, salt and pepper. And that's it. So good.

ReplyDeletewell, I love all things with Pasta, so, it's Pasta with vegetables as a stir fry or a salad or with a sauce (with tomatoes or cream cheese).
I need to try those Kohlrabi Schnitzel, they look delicious. I do eat meat, but I try to reduce my amount so this would be a great alternative.
And it's raining here in Germany, as well. It is more like spring or fall not like summer :-D

Throwing veggies all together with rice and pasta is my go-to dish too. It's a great way to clean out the fridge. :-)

DeleteYum! My favourite easy recipe right now is a wrap full of hummus, cheese and veggies.... super simple. The weird part is I love the combo of hummus and pickles.... ~Stephanie

DeleteMy go to dish is pasta with olive oil, lemon, and crushed red chili flakes and I toss it with spinach and pancetta. It takes just as good without the pancetta too :)

DeleteYum! These are all sound amazing and I'm definitely book marking this post. I've been making big roasted veggie with quinoa "yum bowls" (yum sauce is this like vegan sauce that is just to DIE for...). So delicious.

ReplyDeleteI am on soft food at the moment because of my braces so it´s mostly soup for me.
I do love fried tofu and couscous with peanut sate sauce, or quinoa with falafel and avocado as a salad!
Hmm, your recommendations sound so delicious! I need to make some couscous tomorrow! And falafel are always good!
