Katrin's kitchen: a potato - peanut butter - vegetable - curry

Hallo meine Lieben,

I am so honored that my friend from New Life In Spain wants me to share one of my recipe with you. That's so awesome and makes me smile a lot because I love to cook but I don't consider myself a great cook. I never really follow any recipes, I just mix things together and then see how it tastes. But it usually turns out really good. Can't say that about my baking skills. 




So today I want to share my "recipe" for a curry with potatoes, peanut butter, chick peas and other vegetables with you. I really like this curry a lot, it is very spicy and you can pretty much add all the vegetables you want. Even onions but I don't recommend it, they ruin everything. 

And here is what you need:

- potatoes
Can't really tell you how many, I always use a lot so that I have lots of leftovers and can eat the curry a couple of days. As I said, I don't really have a recipe, I listen to my heart and my stomach.


- coconut milk
One can should be enough. I always cook for two people but we have lots of leftovers so it should be enough for 4-5 people. If you want to cook for more than 5 people you should use two cans because you don't want the curry to be too dry.

-. chick peas
One can or 400 grams should be enough. 

- mushrooms
I usually use 500 grams for one huge pan of curry. David and I both like mushrooms a lot so we can't get enough.

- bell pepper
I use one bell pepper, it doesn't matter which color you choose, they all taste great. 



- peanut butter
I would say 4-5 tablespoons of peanut butter are fine. You can use more if you are a huge peanut butter lover. It all depends on your taste.



- curry paste
I usually use 5 teaspoons. You can use green, red or yellow curry paste, it depends on how spicy you like it. Here in my small town I was only able to find green curry paste. If you are a vegetarian or vegan make sure that you read the ingredients, some curry pastes contain fish. 


- soy sauce
3-4 tablespoons should be fine. If you don't like the taste you can use another liquid. Vegetable broth for example. 


- some olive oil 
- spices. 
I usually use some sea salt, pepper, basil, more curry, dried peppers...
- mustard 
That's not a must, I just like mustard a lot. 



Okay, that's all you need. Here are the instructions.

Peel the potatoes and cook them until they are done. Then cut them into slices and roast them in a pan together with some olive oil.
Wash the mushrooms and cut them into slices, do the same with the bell pepper and add them to the potatoes.
Then add the chick peas and use as many spices as you like. 
In a separate bowl mix the peanut butter, curry paste, soy sauce and mustard together until you have a smooth paste. 
Add the coconut milk to the potato-vegetable-mix and let it simmer a bit.
The add the mix of curry paste, soy sauce, peanut butter and mustard. Let it simmer a little bit more. 
Taste it and see if you need some more spices.

  3. That sounds sooo good! I love the combination of coconut milk and peanut butter! I have never tried it with curry paste, but that sounds delicious!

    I don`t really have ONE favorite recipie. When I do cook, I usually do it however it feels right and if I do use a recipie I pretty much always alter it :/

      It seems like we both cook that way! Most times when I start cooking I have no idea how it will turn out!

Hi again ;) I don't remember what I used the last time, but today I made it again, and this time I had (almost arghhh) all your ingredients, just missing the mushrooms, and adding onion & garlic. (Cause I LOVE onions muahaha!) Ah, and no soy sauce cause I am intolerant to soy, but it tasted lovelyyy! Thanks again for the recipe ;)
