Song of the corn & let's root for root vegetables.

Hallo meine Lieben,

it was so much fun to talk about fruits a couple of days ago that I decided I want to talk a little bit about vegetables today. Plus I am really hungry and that makes me think about food. 
I eat fresh vegetables every day, they are the main ingredient in all my meals. Funny thing is that I was really picky when I was younger, I did not like salad or broccoli for example. All the things I love now. I really don't know why. I stopped eating meat when I was 12 but I did not start eating salad back then.

Well, here are my favorite vegetables.

1. Broccoli


Love it so much. Roasted with lots of spices and potatoes. Or in a curry with rice. My two favorite ways to eat broccoli.
David hates it by the way. He says it smells and tastes terrible and always says "Pfui" when I make it. 


2. Corn


I cook it first and then roast it in a pan with lots of spices. So delicious. I am still addicted to it. But not three-on-one-day-addicted anymore. 


3. Potatoes.


There are so many things you can do with potatoes. I love to roast them, it seems like roasting stuff is my favorite thing to do. Last week I made roasted potatoes with mushrooms and peppers and a peanut butter and curry sauce. Delicious.

4 Chick peas


I tried chick peas the first time when I was 12 and went to a Moroccan restaurant with my family. I think I completely ignored the couscous back then and ate all the chick peas. It was love at first sight. 

5. Mushrooms


Again roasted with lots of spices. So good. David never liked them but tried them when I made them months ago and now he likes them too. Very exciting for me. I love to convince people how good vegetables are. Haha. 

6. Peppers


I love to fill peppers with rice and mushrooms and then roast them in the oven. So delicious. All kinds of peppers are awesome, even the really spicy ones. I like to eat very spicy food and  I always have to remember that not everybody likes that when I cook for others. 

7. Asparagus


I roast it in a pan with olive oil and lots of pepper but I also add some brown sugar. And then eat it with potatoes. Yummy.

These are just my top 7, I really love all kinds of vegetables. Except  of one. The worst food ever:

Onion! Pfui!

  1. If you ever run out of things to post I wouldn't mind some of those recipes!! Everything you do with those vegetables sounds yummy! I would love to eat more vegetables, but I am not too creative and sometimes it just gets a bit boring. I got inspired just reading this post but would love more details! The thought of roasted potatoes with mushrooms and peppers and a peanut butter and curry sauce made my mouth water! Would you share your secrets? :)

    1. Oh, I feel honored that you want to know more about my recipes. :)Thank you! I will definitely write about the peanut butter-curry-one soon. But I have to warn you, I don't really have recipes...I just mix together things. :) But yeah, I will share my secrets. :))

    2. But that's fine. I don't really use recipes for dinners either, I just slash in this and that and I never measure amounts. But yes, please share peanut-butter-curry-deliciousness!

  2. This is probably going to be really hard to believe but just a few weeks ago I tasted raw broccoli for the first time, and let me just say it's AMAZING! My husband made me taste it after I kept saying how much I hated it raw & only ate it when its steamed. As much as I disliked hearing him say "I told you so", he was right.

    1. Haha, that's so funny! :) I always make my husband taste stuff and hope that he'll like it. :)
      I have to say that I like steamed broccoli a lot better than the raw one though!

  3. Currently I love zucchinis (we have sooo many in our garden right now :), peppers, mushrooms, cucumbers, tomatoes and I just recently found out I love avocados.
    Broccoli is my favorite veggie in winter, somehow not so much in summer.

    Hmmm...though it's in the middle of the night here right now I'm getting hungry ;D

    Vielleicht sollten wir lieber zusammen kochen statt zu backen? :D Da wir beide die gleichen Dinge mögen und beide Zwiebeln nicht ausstehen können, würden wir wahrscheinlich köstliche Dinge zustande bringen!

    1. Oh yeah, I forgot zucchini! Love them! It's awesome that you have so many in your garden! How do you eat avocado? I tried it once on a sandwich and didn't like it very much but I am sure there are better ways to eat it!

      I always get hungry in the middle of the night. :)

      Wir sollten auf jeden Fall mal zusammen kochen, das klappt mit Sicherheit besser als backen! Haha. Und alles ganz ohne furchtbare Zwiebeln!

The last avocado I had was prepared like this: I spread it on my bread, put some pieces of feta cheese on it, added cucumbers and tomatoes, a little bit of pepper and some olives...it was everything I found in my fridge and to me it tasted great together though it sounds a little strange ;) It was a very fast and yummy lunch this way.

      I get hungry in the middle of the night a lot too...especially when I was out and I come back late at night...I usually have to eat something before I can go to sleep. Love it that we're so similar in so many ways :)

      Oh yeah, when I come back home in the middle of the night I need to eat. I can't sleep without some food. Even if it's 4 am. We are so similar! :)

Hey lovely, all of those are my favorites as well - though with mushrooms it depends on how it's done :) When I was younger I didn't like beans, eggplant and certain types of cabbage, I'm so much better now. A way that I try to get a balance of different fruit and vegetable in my diet is to eat different color fruits and vegetables every day and if I remember to get different colors when I'm shopping I find I end up with a great balance! :)

    Everything else is delicious... except mushrooms. But oooh broccoli and corn and potatoes and everything else. Mmmm Mmmmm good.

  6. I love vegetables but I fully agree that onions are evil...all onions from spring onions to shallots...yuck! I also don't like fennel or brussels sprouts.

    My favorites are eggplant, zucchini, bell peppers, asparagus, mushrooms, sweet potatoes, cucumber, and the king of all avocado (ok, so avocado is technically a fruit...but I always feel like fruit is sweet!)

    1. Oh yeah, I don't like fennel either. Only as a tea but not as vegetable. It has such a weird dominant taste. But I love brussel sprouts! With potatoes! Yummy!

      Weird that avocado is a fruit. I never know what to do with avocado so I don't eat it. I need to search for some recipes.

  7. Hi! I love vegetables too! The only ones I don't like so much are asparagus. And carrots are fickle. Delicious when you make soup or throw them in the oven so they become sweet, but I can't eat them raw!

    I don't like it when people overcook vegetables though. Especially broccoli. It's so delicious when you cook it only a couple of minutes, or just throw it in a wok pan and bake/fry it (I'm always lost at the specific English cooking terms, they always seem slightly off from what I mean in Dutch).

    My boyfriend is very strict on getting enough vegetables every day. He doesn't count mushrooms and corn as vegetables! (Shrooms are fungi and corn is wheat/grain.)

    Also, onions are delicious! Just bake them for 15 mins or so, on low heat.

    I was on holiday in France a couple of weeks ago and they had yellow tomatoes, white eggplants, and purple cauliflowers! I want those too! The worst part was: the yellow tomatoes and white eggplants were produced in the Netherlands, but they don't sell them here! So sad! I want more interesting vegetables!

    1. I know a couple of people who don't like asparagus but I just can't understand it. :) And sometimes I eat raw carrots for breakfast. :) But usually I give them to the bunnies.

      And I totally agree, overcooked vegetables are not very delicious, especially broccoli, cauliflower and carrots.

      I consider corn and mushrooms as vegetables but there are so many different opinions on what is a vegetable and what not. It's cool that your boyfriend is so strict about getting enough vegetables. I guess most men don't care that much.

      No onions for me. Never ever. :)

      I have never tried yellow tomatoes, white eggplants and purple cauliflower! Sounds interesting! I need to look for them. It is so weird and mean that you can't get them in the Netherlands!
